Pandemic Mac + Cheese

You know that feeling when you eat that perfect bite of food and you feel like “hey- [insert delicious food] you really get me!”

That is how I feel about Mac + Cheese in the best of times.  In case you had your doubts, we are not in the best of times right now.  I’m not gonna spell it out for you all, but you know what’s up. 

What is also up is a need for some serious comfort and some serious comfort food.  Around week two of this pandemic insanity, it became clear that I needed all the things: booze, sweets, carbs and some real dark journaling.  I had to kick the booze habit, all the sugar was making me ill and the emo journaling was…well, the journaling was actually really healthy.  A+ on that one!

The carbs though…that was and is necessary, but I had to find a way to elevate that beautiful boxed goodness so I could look myself in the eye and confidently say “You my friend, are an ADULT.”  Let’s be real though, with a roller coaster of emotions and energy, I needed the laziest possible solution.  Enter the Pandemic Mac + Cheese: a little smoky, a lot cheesy and oh so satisfying.  Once you add those pretentious microgreens on top, you’ve practically got yourself a warm salad!

The easiest way to up your mac + cheese game while hunkering down during the pandemic...and beyond!

Instructions

  1. Cook the pasta per the box's instructions.  Add the cooked pasta back into the sauce pan and over low heat add all the ingredients except the microgreens, including the powdered cheese packet.  Once all the ingredients are mixed well, pour the mac + cheese into a bowl and top with microgreens.  Enjoy!
